It’s here! The week we wait all year for: Thanksgiving week! So in preparation of the BIG DAY, here’s a blog post with all of our favorite Thanksgiving-friendly recipes in one handy dandy spot. Here goes!

And finally, here’s one of my favorite side dishes: sweet potato casserole with marshmallows. I know many people think this dish is too sweet to be served with dinner, but I love it all the same. Hope you guys have a lovely turkey day with your loved ones!

sweet potato casserole

adapted from Southern Living
serves: 6-8

ingredients:
4 1/2 pounds sweet potatoes
1/2 cup brown or white sugar
1/4 cup milk
1/2 cup butter, softened
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
2-3 cups miniature marshmallows
optional topping:
1 1/4 cups cornflakes cereal, crushed
1/4 cup chopped pecans
1 tablespoon brown sugar
1 tablespoon butter, melted

directions:
Bake sweet potatoes at 400° for about 1 hour or until tender. Let cool to touch; peel and mash sweet potatoes. Beat mashed sweet potatoes, sugar, milk, butter, eggs, vanilla, spices and salt at medium speed with an electric mixer until smooth. Spoon potato mixture into a greased 11- x 7-inch baking dish. Bake at 350° for 30 minutes. Remove from oven, add marshmallows or cornflake topping and bake uncovered for an additional 10 minutes until topping is browned. Let stand 10 minutes before serving.
