Sometimes the simplest thing escape me. I can make Thanksgiving dinner without a problem, but scrambling eggs is difficult and somehow I couldn’t master a smoothie until recently. In fact, about a year and a half ago I picked up cooked spinach to make a smoothie, that’s how little I knew about making them. Big mistake. That one was awful.

This smoothie, however, is delightful. The Summer heat is beginning to settle in and our dinners are getting lighter. While Alex was away recently I wasn’t always interested in making dinner and this smoothie was a perfect meal accompanied by a small salad.

The ingredients are simple and things I usually have on hand. If the baby spinach scares you, I beg you to just try it. The sweetness of the peaches completely covers any taste of the greens while you still get all the nutrition from it. I toss the ginger in whole as my Ninja blender tends to pummel anything in its path. If your blender isn’t as strong then grating it beforehand is a good idea. Enjoy and keep cool!

makes 1 serving

ingredients:
1 1/2 cups frozen peaches
2 handfuls baby spinach
1/2 cup fat-free plain Greek yogurt
1/2 cup water or coconut water
3 large ice cubes
1/2″ chunk ginger
1 1/2 teaspoons honey

directions:
Add all ingredients to the blender. Blend on high speed until the ice has been broken down and it’s smooth. Enjoy immediately.
