roasted green beans

Did you notice the roasted green beans served alongside the Cuban sandwiches in my last post? Well I’ll let you in on a little secret: those green beans were frozen. And they are my new handy dandy vegetable side dish of choice. This super easy five ingredient recipe takes a little bit of time in the oven, but you get a simple and delicious side dish that requires minimal effort– that’s my kind of recipe!

serves: 4-6

1-1.5 pounds frozen whole green beans (or haricot vert)
2 tablespoons olive oil
Salt and pepper
Garlic powder

Preheat oven to 400 degrees. On a foil-lined baking sheet, toss the frozen green beans with the olive oil and then add salt, pepper, and garlic powder to taste (I usually add a large pinch or two of each) and toss until evenly coated. Make sure the beans are in a single layer and roast in the oven for 45 minutes, tossing at the halfway mark. Taste and add more salt and pepper if needed before serving.
