I’ve posted banana nut bread before as well as banana oat muffins, so add these banana nut chocolate chip muffins to the recipe box too. But these muffins don’t contain any grain, gluten or dairy, making them the perfect Paleo breakfast (or anytime) treat.
Since the muffins don’t have much flour, they readily fall apart, but that doesn’t detract from the taste. The chocolate chips are a deliciously sweet touch and the nuts give the muffins a bit of texture and bite. Honestly, you won’t miss anything!
3 ripe bananas
3 eggs, whisked
1/4 cup maple syrup
1 teaspoon vanilla extract
1/2 cup smooth almond butter
1/4 cup coconut flour
1/4 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup chopped pecans or walnuts
1/2 cup chocolate chips
Coconut oil spray for greasing the pan (or other grease of your choosing)
Preheat oven to 350 degrees. Mash the bananas in a large bowl with a fork. Add the eggs, maple syrup, almond butter, and vanilla extract and mix together. Add the coconut flour, cinnamon, baking soda and powder and a pinch of salt and mix well. Fold in the nuts and chocolate chips. Scoop batter into a silicon muffin pan or a greased metal muffin pan. Bake for 25 minutes. Let cool before removing from pan.
