Have you seen the Bud Light commercial with the quinoa burgers? Derek and I crack up every time it comes on TV.
The guy says that they “taste like a dirty old tree branch” but goes ahead and cooks (and presumably eats) one because they are good luck for his football team.
Inspired by that commercial, I came up with my own version of “qween-ohs”. I used red quinoa so that the patty would resemble a beef burger a little more, at least in color. And combined with black beans, these protein packed veggie burgers are filling and delicious. Eat them today for some good luck (or for the good health).
quinoa and black bean burgers
2 cups cooked quinoa
1 can black beans, drained and rinsed
2 tablespoons bbq sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup sour cream (or mayo or Greek yogurt)
2 tablespoons olive oil
Burger toppings: lettuce, tomato, avocado, etc.
To make the patties, puree the quinoa, black beans, BBQ sauce, salt and pepper in a food processor and form into four 3/4″ thick patties. Make the spicy cream sauce by combining 2 teaspoons (or more!) of hot sauce with the sour cream. Heat the oil over medium-high heat in a skillet and cook the patties until heated all the way through, about 3-5 minutes per side.
