marinated and grilled zukes

We have posted lots of different zucchini recipes on the blog including squoodles, zucchini boats, and even baked in bread. But here’s my favorite way to eat it: marinated and grilled! With all the meat grilling we’ve been doing this summer, we like to add veggies to the mix to round out our meals. There’s something about that delicious bbq char that you get that makes all grilled food taste so good!

Grilling zucchini (and other cut veggies) can be a little challenging, since small slices can fall through the grates, but threading them on skewers makes for much easier flipping and grilling. If you don’t have a grill, this marinated zucchini would also be delicious sauteed in a pan. Hope you give it a try!

serves: 2

2-3 medium zucchini, cut into 1/2-inch thick disks
2-3 tablespoons olive oil
Juice and zest of 1 lemon
2 garlic cloves, finely minced or pressed
1/4-1/2 teaspoon red pepper flakes
1/2 teaspoon salt
1/4 teaspoon pepper

Put the zucchini disks in a large ziptop bag and toss in the rest of the ingredients. Seal the bag and gently massage the zucchini to make sure it is well coated in the marinade. Let sit at room temperature for 15-30 minutes. To cook: saute in a pan or on a grill pan. To grill: Thread the zucchini on skewers through the “face” of the disks and grill over medium-high heat, flipping once, until you get nice grill marks. Season with additional salt and pepper to taste.
