Boredom breeds creativity and during Hurricane Sandy I not only made this delicious cauliflower but I had some pork chops to use up before the power (potentially, but luckily didn’t) went out. I know how to make pork chops two ways and Alex loves to eat them, so it was time to shake things up.

Adding beer to a recipe automatically makes me more excited about it. It gives you an excuse to drink the rest of the bottle if you don’t use it all, but also because I think it’s highly underused in most people’s cooking. This stout glaze is deliciously sweet and super easy to make with items that you have around the house. That being said, I hate ketchup. I think it’s one of the most overrated condiments ever, but it really works in this sauce in a “the sum is greater than the parts” sort of way.


stout glazed pork chops

serves: 4

1 tablespoon olive oil
4-5 pork chops
salt and pepper, to taste
12 ounces stout beer
1/3 cup ketchup
1/2 cup brown sugar
1 teaspoon cornstarch

Heat the oil in a large pan over medium heat. Season the pork chops with salt and pepper and add to the pan. Cook until brown, about 3-4 minutes on each side. In a bowl, whisk together the beer, brown sugar, and ketchup. Add this to the pork chops and turn the pan to low. Cover and cook for 30 minutes. Add the cornstarch to 1/4 cup water and mix until it’s dissolved. Add the cornstarch to the pork chops and let cook for a few minutes more until the sauce has thickened. Serve immediately.
