For too long I avoided avocados because they’re fattening. When the idea of “good fat” came about I didn’t buy the hype. Fat is fat, right? I now know how ridiculous that logic is and I’m glad that I’ve since embraced the avocado.
While discovering new foods, I’ve also recently discovered Applegate smoked bacon which is super delicious. It doesn’t do a disappearing act and shrink down too much in the pan when you render it and the flavor is great. I highly suggest it. This sandwich is not as good for you as the avocado. It is, however, delicious and sometimes you just have to indulge a little bit. It’s also super filling, so feel free to share, you’re probably better off that way!
bacon cheddar avocado grilled cheese
makes 1 sandwich
2-3 slices of bacon (I use smoked bacon)
2 slices of your favorite sandwich bread
4 thin slices cheddar cheese
4 thin slices avocado
1-2 tablespoons butter, softened
Place the strips of bacon in a pan on medium-low heat and cook it slowly until it’s nice and crisp. Remove it from the pan and set it aside until it’s cool enough to crumble or chop. Now build your sandwich. Layer the bread, three slices of cheese, and the avocado. Add the crumbled bacon and put the last piece of cheese on top. Top all of it with the last slice of bread and spread the butter on both of the outsides of the bread. Heat a different (non-bacon greased) skillet to medium-low and grill the sandwich until it’s golden brown, flip and repeat on the other side. Serve immediately.
