is it delivery? no, it’s a waffle.

Despite having not enough time in my day, I watch too much television. One of the things I’m ashamed to admit to watching on a regular basis is The Rachael Ray Show. She’s so irritating and I hate it when she says. “yum-o.” But she did have an entire week on waffle irons, and we all know how much I love my waffle iron. She made a “wa-zone” (a waffle calzone. See why she’s irritating?) that would never fit in my small waffle iron, but it did inspire this focaccia-like dinner.

This is like focaccia meets pizza. The waffle iron makes this easy to make because you can pop the dough in and walk away for a few minutes. Things don’t cook slowly in a waffle iron, so this is easy to make on a busy night when you’re multitasking without worrying that it’ll burn. You can top this with whatever you’d like, really, but I like a little fresh greens with the salty prosciutto. Also, prosciutto, like bacon, makes everything better. The shredded Parmesan gives that sharp flavor that goes so well with everything else that’s going on. Alex could easily eat all four of these in one sitting, but I make him share.

serves: 4 as dinner , or 8 as an appetizer

ingredients:
1 package pizza dough
2 teaspoons dried rosemary
1/2 teaspoon ground black pepper
1/2 teaspoon sea salt
1 cup loosely packed baby spinach or arugula, washed and destemmed
6 thin slices of prosciutto, sliced into thin ribbons
3/4 cup parmesan, shredded
marinara sauce for dipping

directions:
Preheat your waffle iron to medium and the oven to 350 degrees. Cut the pizza dough into 4 equal pieces. Stretch one of the pieces as big as you can while still making it smaller than the waffle iron. Spray the iron with a little olive oil and place the dough on it. Combine the rosemary, salt and pepper in a bowl and sprinkle a quarter of the mixture onto the dough. Close the iron and let the dough cook until it’s crisp and golden brown. Repeat with the remaining pieces of dough, placing them on a cookie sheet when they’re done. When they’ve all been waffled, top them with a thin layer of the greens, prosciutto and a sprinkling of Parmesan. Place them in the oven for 5-7 minutes to melt the Parmesan slightly and to reheat the crusts. Serve with marinara for dipping.

      Maybe, but you can’t call it pizza. He won’t accept it as the sauce isn’t on the dough. He doesn’t even think white pizza is pizza.
