Did you hear about the honey illegally coming from China several months ago? I remember reading about it and being so sad that my beloved honey might be a part of some multi-national issue! Ok. Not really. But I do love honey!

honey sauce spiced chicken

This recipe is a quick weeknight meal that is sweet, spicy, and a little bit tangy. It’s sure to add a little something to any chicken dinner doldrums. I like using chicken thighs since they are so much more flavorful than white meat, but you can easily switch it up (just be sure to cook the meat long enough or to use halved chicken breasts).

serves: 4

ingredients:
2 teaspoons garlic powder
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon paprika
1/4-1/2 teaspoon cayenne pepper
8 skinless, boneless chicken thighs
Cooking spray or oil
6 tablespoons honey
3 teaspoons cider vinegar

directions:
Preheat broiler. Combine first 6 ingredients in a large bowl or a gallon size zip-top bag. Add chicken and toss to coat. Place chicken on a broiler pan coated with cooking spray or oil. Broil chicken 5 minutes on each side.

Meanwhile, put honey in a small bowl and microwave for 10-20 seconds. Add vinegar to the honey and combine, stirring well. Remove chicken from oven; brush half the honey mixture on chicken. Broil 1 minute. Remove chicken from oven and turn over. Brush chicken with remaining honey mixture. Broil 1 additional minute or until chicken is done.

    I was looking for something different to do with my chicken thighs and decided to try this recipe. So glad I did. I can only say, ” mmm, mmm, mmm, mmm, mm.”. I used bone in, broiled them for the prescribed time and then baked them for about another 10 minutes. Will definitely make them again. Thanks.
