Sure you might think, “zucchini in a bread?”, but why not? We make pumpkin bread, everyone loves that. This bread is fluffy on the inside and yet crispy on the outside. It’s quick to make and you can pop it in the oven and go about your day as it bakes. It’s fantastic by itself or you could spread a little cinnamon cream cheese on top. Go, enjoy the wonders of zucchini as a sweet, not a savory.

makes 2 loaves

2 1/2 cups sugar
3 eggs
3 cups flour
3 teaspoons vanilla
2 cups zucchini, shredded
1/4 teaspoon salt
1 teaspoon baking powder
3 teaspoons cinnamon
1 cup nuts (optional)

Preheat oven to 350. Combine all of the ingredients and mix together. Pour mixture into two greased loaf pans and bake for one hour. You know it’s done when you insert a knife into the middle and it comes out clean. Let it cool a little before trying to get it out of the loaf pans or else it’ll crumble.
